Thai flu soup.

So, looks like I got my flu shot a little bit too late this year, cause I got it…and I got it good, real good. So good that I was seriously considering investing in diapers and an airplane-style barf bag so that I wouldn’t have to roll my blob of a body out of bed to crawl to the bathroom and praise the porcelain gods. I don’t wish the flu on my greatest enemy, but if you do happen to catch it, all I’m sayin’ is thank the good Lord for Pinterest and sparkly nail polish. Which is sooo much more sparkly and exciting when you can’t move more than 10 feet without eating floor. Gripes aside, I was able to find some awesome soup recipes online – cause let’s be honest, when you’re sick, anything that’s salty in liquid form is golden.

I’m feeling like a human again, finally, and back to work and what not. I took quite a few  days off from the gym too, so I’m trying to build my strength back up to it’s full potential and eating more than I usually do. Even in times of doubt and when I could be mistaken for a pregnant woman, I have to remind myself that digestion does in fact happen, and I do need the extra nourishment, especially getting back into the swing of lifting.

If you (or a friend or fam member) is sick this season, I made an awesome soup that I promise will make you (or them) feel a little bit better, even if just for a few moments. It’s full of goodness, a little spice and tons of immune boosting veggies. Enjoy!

Thai Flu Soup

Ingredients:

4 cups or one container chicken or mushroom broth

1 cup rice noodles (regular work too, but I am gluten free)

 1/2 cup each of:

Sliced sweet onion

Halved grape tomatoes

Water chestnuts sliced

Sliced shiitake mushrooms (I used probably about 2 cups of these though cause I love em! They are KEY!)

Baby corn

Snow peas

1/2 tbsp Apple cider vinegar

2 tbsp sesame oil

1 tbsp minced fresh ginger root

1 tbsp hot chili sauce or paste

About 5 to 10 basil leaves (fresh)

Dash salt

All I did was simmer the ingredients for a few hours, even better as leftovers cause the favors of the mushrooms really come out. You can freeze this soup easily and defrost it, too.

  1. Glad you’re feeling better! Fun fact- the flu shot is only about 62% effective this year because they didn’t quite get the virus strain correct.

    Also, I miss you…let’s please get together.

  6. I’m really happy that you are feeling much better again (or well, human again)! The flu this season stinks – so many people are coming down with it. I am praying I stay ‘healthy’, currently dealing with a mad sinus infection but I’m taking it over this flu everyone else is dealing with. This soup sounds amazing :)
