Paleo Coconut Flour Waffles

Hello friends! Today I wanted to share with you my newest obsession in the kitchen – WAFFLES!

The base recipe I use for my Paleo Coconut Flour Waffles is as follows:

Makes 1 Belgian waffle or two smaller whatcha-ma-callit waffles…

  • 2 tbsp coconut flour (I use Bob’s Red Mill brand)
  • 1 tbsp flaxseed meal or almond flour
  • 1 tsp gluten-free baking powder
  • 2-3 eggs (usually 2 is enough or 2 and 1 white)
  • 1/2 tbsp coconut oil plus more for waffle iron greasing
  • 1/4+ cup coconut milk plus more if needed to thin (full fat coconut milk works best – it’s a tad thicker!)

*optional sweetner to taste

Combine dry ingredients and slowly add in wet, letting the coconut flour absorb the moisture. Stir until you get a medium-consistency. Not too thin, but not cookie-batter like. Meet me in the middle here, folks!

Grease your waffle iron and waffle away!

Coconut butter & jelly sammich style:

Topped with dippy eggs & coconut oil or butter
